I used to love to make grilled pimento cheese sandwiches. Then I couldn’t find the pimento cheese anymore.
So I decided to create my own. And since I always have roasted green chilis in my freezer, I decided to try adding those as well.
This recipe is simple and can be used so many ways.
Ingredients
1 – 8 Ounce Neufchatel or Cream Cheese
1 Cup Sharp Cheddar Cheese, grated
2 Large Green Chilis, diced – or 1 – 4 ounce can diced green chilis
1/2 – 4 Ounce Jar Pimentos (or more, to taste)
2 Heaping Tablespoons Sour Cream
Directions
1. Cut the cream cheese into chunks and put them in a food processor or blender.
2. Add the rest of the ingredients to the processor or blender.
3. Pulse until the ingredients are well blended, but where you can still see tiny pieces of pimentos and green chilis.
Keep the cheese refrigerated after making it.
