This gluten free Mexican Tortilla Chip Casserole is easy to make and delicious!
It makes enough that we can freeze half of it for another meal, which is nice to have on hand when everyone is starved and you want to eat now.
This is an excellent way to use up all those small bits of tortilla chips that have accumulated in the bottom of the bag.
Ingredients.
3 Pounds Hamburger
4 Onions, diced
6-8 Cloves Garlic, minced
1 – 28 Ounce Can Crushed Tomatoes
1 – 15 Ounce Can Diced Tomatoes
1 Can Ro-Tel (or 2 cans if you like extra spicy)
1/4 Teaspoon Cayenne Pepper
2 or 3 Shakes of Crushed Red Pepper
1/2 Teaspoon Parsley Flakes
Salt and Pepper to Taste
2 Cups Shredded Cheddar Cheese
Tortilla Chips
Directions.
1. In a 6 quart pot, brown the hamburger, onions, and garlic.
2. Add tomatoes, Ro-tel and seasonings with all their liquid.
Rinse cans with a bit of water and add it, too.
Mix well and simmer for a few minutes.
3. In a 9×13 greased pan, layer:
1/3 of Meat Mix
2/3 Cup Shredded Cheese
Layer of Coarse Tortilla Chip Pieces
1/3 Meat Mix
2/3 Cup Shredded Cheese
Layer of Coarse Tortilla Chip Pieces
1/3 Meat Mix
Top with the rest of the shredded cheese.
Bake uncovered at 350 degrees for 35 minutes.
Serve with shredded lettuce or a salad.
Tips
You can make a thicker or thinner layer of chips or cheese in the casserole, according to how your family likes it.
I sometimes freeze packets of the meat mix, which we use to make Taco Salad or as a chip dip. Or you can use the frozen bags to make the casserole (thaw first).
