This chicken salad recipe is gluten free, nut free, and low carbohydrate.
My friend, Kelli, makes this delicious chicken salad, and she shared her recipe with me. Two ingredients make it unusual: craisins and Tony Chachere’s Creole Seasoning.
Ingredients:
4 Chicken Breasts, cooked and shredded
6 – 8 Green Onions, sliced
2 Stalks Celery, diced
1 cup Craisins (dried cranberries)
4 – 6 Tablespoons Mayonnaise
Salt and Pepper to Taste
Tony Chachere’s Original Creole Seasoning
Directions
In a large bowl combine shredded chicken, sliced green onions, diced celery and craisins. Mix well.
2. Stir in mayonnaise, salt and pepper.
3. Sprinkle Tony Chachere’s over the chicken salad and stir in. This can be hot, so start with a small amount and add more a little at a time until it’s perfect for you.
You can change the amounts of any of the ingredients according to how you like it.
Serve chicken salad with shredded or torn lettuce.
Refrigerate or serve immediately.
