Candy Cane Fudge is a great recipe that combines two favorite sweet treats: candy canes and chocolate.
It’s so easy that kids can make it with some adult help. Don’t forget to supervise them when using the stove.
Mix in a saucepan:
1 cup sugar
1/3 cup cocoa
Stir in:
1/4 cup butter
1/4 cup milk
1 Tablespoon corn syrup
Bring to a boil and boil 1 minute, stirring constantly.Remove from heat.
Add:
1 teaspoon vanilla
Beat in:
3 to 3 1/4 cups powdered sugar
Add half the powdered sugar, and then stir in 1/2 cup crushed candy canes before adding the rest of the powdered sugar.
Pour into greased 8 x 8 inch square pan,
sprinkle more crushed candy canes over the top and let harden.
You could put a red and white stripped peppermint candy disk on each piece of candy cane fudge, also.
Or stick a small candy cane in each piece of fudge for a handle.
To crush candy canes easily: break into large pieces and put in a ziplock bag. Push out most of the air and seal the bag.
Gently pound and roll the canes with a rolling pin until they are as crushed as you like. Don’t make them too fine or they disappear into the fudge.
Stir in a cup of Rice Krispies. You may need to add slightly less powdered sugar as the cereal may absorb some of the moisture.
If no one in your family has nut allergies, you can add 1/2 cup of chopped nuts.
If you are really desperate, just melt some chocolate chips in the microwave and stir in the candy cane pieces!!
You could drop this concoction by spoonfuls on a sheet of waxed paper – if there is any left after you are finished tasting it!
